This is close to what I did to make mine:

seared the chuck roast trimmed of fat
1 IPA beer
1 can beef stock
1 huge onion
4 cloves garlic
fresh thyme
4 hr simmer

Added 4 large carrots 2hrs into cook

When things thickened a bit I diced up the meat and added mushrooms (these will give off water)
then cover with a lid and let simmer for 1 hr

use corn starch sparingly to thicken
bring to a boil
then off the heat to cool

home made dough - follow instructions in recipe above

put cooled off filling into baked shell and cover with top dough

cut vent holes and egg wash top

425F oven until crust is golden

Filling was great and since it is made ahead you can adjust the taste..

crust was the best I ever made! soft and flaky holy moly...
 
As a Brit - I'll give that a thumbs up, looks great. You can't beat a healthy dose of 'vitamin P' ! From talking to American friends, I'm not sure how available offal is in your stores, but if you can get hold of any kidney, a steak and kidney pie (to a similar recipe minus the carrots and mushrooms) is a thing of wonder.
