Hi guys
In the process ofsmoki g some pork ribs..have included a couple of pics.
Will update as the progress.. unusual day in the uk....its not raining so thought I would make the most of it.

Using a char griller with side smoke box. Also going to use the 321 method as bit of a novice.

Any Axvice on maintaining a good and consistent temperature and at what stage should I top up the charcoal..
Also should I tip up the charcoal from the chimney or straight in.

Any support grateful
