Brisket w/peach paper

Hey there, been lurking this site for a little bit in the process of smoking a brisket and wrapped with peach paper for the first time. Usually foil wrap. When wrapping with the paper does it help push through the stall?had probably 8-9 lbs whole brisket after trimmed . Been on the smoker for 11 hrs still only at 178 cooking at a steady 225-240
 
Wrapping will help it through the stall. But smoking at lower temps you are just going to have to be patient.
 
I am also a 230 degree guy when it comes to brisket. On the weight you gave us, it would normally take me about 17 hours. (give, take, 30 mins or so) Wrapping will certainly help with the stall. Think about what the wrap is actually doing..... First, stops 99% of smoke from entering the meat. Second, the wrap is trying to contain moisture. Containing moisture means retaining heat. Also to piggy back on Dave, make sure your temp probe are properly calibrated.

So how did the brisket turn out?

Guess it turned out good.. it was juicy and good .. now for flavor aspect no clue . I have a sinus infection that has my tastebuds out of whack. I used the run I normally use and it tasted bland which isnt normally the case. So I got a bunch frozen and will try it again in a few weeks.. wife said it was good so I'll take her word
