If that's the deal, don't go there. Looks great for the camera but it's very dry when eating. You'll notice a lot of folks put brisket, butts, etc. in foil and then into a cooler to let them rest for a period of time. That's so the juices redistribute back into the meat instead of spilling all over the cutting board. End result, you get to eat a mosit and flavor filled piece of meat.
