Hello folks.  How much Charcoal do you initially put in a Large BGE for a Brisket and how do you maintain a 275 degrees temperatures for several hours.  Do you add charcoal in between? I know the basics but I seem to have struggled with cooking a 9 lbs brisket on BGE.  Puzzled as to how much charcoal to start off with.  Do I start with little so that it is easier to achieve low temperatures of say 275 degrees.  Then add a little more every couple of hours.  Just not sure.  Any guidance would be highly appreciated.  Thank you.
