Smoking an 8.5 lb brisket flat today. It's been on since 7 am. Right now it's sitting at 180. So I'm thinking it will be done by 2:30 ish.

Dinner is not until six. If I foil and towel wrap in a cooler will it hold for 3.5+ hours? Or is it better to hold it in the oven at the lowest temperature possible. I'm just not sure since I haven't held a brisket for this long before.

I did a full brisket last weekend, 9.5 lbs, it held for 6.5 hrs. It could have gone 12 or longer, it was 180 ish when i brought it out, had to rest it outside the cooler. 3.5 hrs is nothing.

So the 3.5 hours in a cooler worked just fine. Meat was still plenty hot upon unwrapping.
