Alright i know it’s been a week but man that was a long smoke. I was exhausted after it was all done.

What can I say? I was a bit disappointed. I could never get that flat tender enough. My feeling is that it was just not a great quality piece of meat. The point was amazing. Tasted like beef butter. So delicious. In fact, we are finishing it tonight.

The flat had great flavor but it just wasn’t succulent. That’s what I had expected. Next time I will try harder to get a better cut. I am not sorry for the effort and I will continue to improve my technique. I don’t mind eating my mistakes.

Thanks again to all of you. Your advice and experience have made me a better pit master in training.
