Good Evening

I have a 7lb brisket flat. If I run my pellet cooker at 250*, should I plan for roughly 7 hour cook time (1 hr/lb)? Or, do you suspect it will cook faster than that?

I will pan it and cover in foil around 160* IT.

It depends on how thick it is, but 1 hour per pound is a good estimate.

Thanks Al! I’ve tried your brisket flat process before, and I’ll be using that as a guide on this one as well.
 
Just reporting back - the brisket flat was on for a total of 7 hours. Started around 7.25 lbs and trimmed a bit of fat off.

It turned out pretty good. It was a littler drier than I was hoping. I think it could have went a bit longer.
