I did a brisket flat last Saturday on my MES30 using SmokinAl's "Brisket My Way" recipe with the onion soup. I did it at 275 - 300. I had a minor setback during the smoke and ended up sticking it in the oven for a couple of hours to finish it off but it did get 4.5 hours of smoke using Pitmasters Choice pellets. It turned out terrific and could not have been any more moist if I had thrown it into a lake. I also did the point and used Jeff's rub on it but have no pictures of it. Here are a couple of pictures of the flat:

I believe my setback on this smoke was due to operator error. I will find out for sure on my next smoke this weekend. -Your thread on butcher paper made me wonder how I forgot to wrap mine with it. I got a roll a couple of months age and have only used it one time -not enough to tell if there is a difference.
 
Nice job on that brisky and bean combo. I'd enjoy a plate of that right about now.

I'm going to have to try the beans sometime. Beans were rarely ever at cookouts and parties I've been to around here. In fact, my only regular experience with beans has been kidney beans in chili (which is how I make too) and garbanzo beans at every salad bar...lol.

I'll have to get a brisket just to try Al's method some time.

<I need to do smoked beans. I imagine my deluxe Cowboy Baked Beans will only be improved by going in a smoker>
