I'll have to get a brisket just to try Al's method some time.

<I need to do smoked beans. I imagine my deluxe Cowboy Baked Beans will only be improved by going in a smoker>
Thanks Tom, Give the brisket a try sometime, it's worth it. I'm sure you'll like the smoked beans.... I need to to do the cowboy beans sometime, but usually when I find something I like, I have a hard time trying anything different.

My cowboy beans are basically a meal in them selves..

~3 pounds of dried beans <before soaking>
1 can of Rotel chilli/tomatoes
About a cup of candied jalapenos
About a can of baked beans <I like adding grilling beans, but you get the idea>
About a cup of BBQ sauce
Half cup of chili sauce
1 Stick of butter..
Ample garlic. <I don't really measure it. Some times I used minced, some times I use powder>
Ample black Pepper.
Ample Chili Powder
Lashings of hot sauce to taste
1 Pound crumbled bacon.
1 pound ground beef browned.
1 pound of diced deli ham.
Ample fried Onions.
Some Brown Sugar to tame the heat.

Soak dried beans overnight. Then drain, boil till soft. Drain..combine every thing else and simmer for hours till thickened. This is a meal in a pot basically. It's got a nice bite tamed by the brown sugar. You can reduce for smaller portions. It does freeze well and if you like the crust from proper baked beans, just put it in the oven at 350f till it's about what ya like.
