Brisket cooking too fast!!! Have it on a WSM 18.5 and used minion method for starting coals. Full water pan and Party Q controller. Brisket, 6.5 lb, went on at 5:15 AM and is at 167 center temp after 2.5 hrs. Shut the Smoker vents and had turned off the Party Q but the WSM temp is still 270. In panic mode due to not serving brisket until 5:00PM this evening.  This is not my first cook and I have repositioned the meat probes once already.  Using a Maverick also to monitor grill and meat temps.  Worried I may have to pull the brisket and attempt to reheat but fear it will be a wasted brisket.  Brisket is a prime grade brisket and has been injected.  Any guidance would be appreciated

Your OK, sometimes they get to that temp range really fast. Just stay the course, it will slow down. Sounds like the pit controller really over shot the temp. You should have left it hooked up it would have brought the temp back down. Just get the temp back in the 225 range & all is good.
