My family and I are going camping in Maine next week. I am bringing my WSM along. One of the things we smoke is Turkey Drum Sticks. These are BIG ones at 1 1/2 pounds apiece. My question is can I brine them this week and freeze them after brining or should I simply freeze them now and thaw and brine at the site? Thanks.
 
I never tried to brine and freeze.The salt content of the brine may prevent it from freezing completly, but the temp will be cold enough to keep it well. Or just smoke em and frezze to take along with you .Ya know, I really don't know. someone.................................
 
I would freeze now and brine at site. I do this myself.
