I have never heard of any use for the molded meat after it was cut off,kinda thought it wasn't fit to eat with mold on it.very interesting video now I will watch the pork 1 thanks for posting
The pork video is also great,folks make it look easy with the meat properly cooled to almost frozen state,thats how I like to cut up my deer.when the meats gets warm it gets jiggly and hard to get straight cuts on steaks ect.Hands take a beating with the cold these days,I have some heavy disposable gloves that do a great job to help retain heat and keep hands clean and warm.
