Here is a recipe i have used from time to time.

Makes 5 lbs of breakfast sausage

5 lbs ground pork (med grind)

2.5 T kosher (diamond crystal) its finer grain

3 t ground sage (level do not pack it)

2 t summer savory

1/4 t nutmeg

3 t marjoram

1.5 t black pepper

You can use fresh clear collagen or sheep.
 
Another one to try out!   I just ordered some 19mm sheep casings.   I think I'm ready to try them.   I'm thinking breakfast links will be a bit more useful then patties.

Can't wait to see the final product!
