Hoping to get some questions answered by anyone who has done this.
I want to stuff a breakfast sausage mix into some homesewn muslin bags and hang to cold smoke first, then bring up to temp(140).After cooling and hanging for a day, I want to remove the muslin case and slice into patties then freeze. Will have the appropriate amount of cure#1 mixed in with spices.
I have never used muslin, and my biggest question is, should I soak the muslin bags before stuffing, and how do I prevent pulling any meat away when I remove the bag after its all done?
If anyone has done this, I would like to hear about it and what your results were.
Thanks

Well I'm clueless but if you don't slice it will last longer. The slices will loose water quickly and get freezer burned, leave in logs till ready to use imo

I use muslin bags alot. I just rinse them inside and out then stuff. Hang and smoke. The bags will peel right off.

Good points from all. Thanks for the input. Will post some pics when I do a trial run.
