Hoping to get some questions answered by anyone who has done this.
I want to stuff a breakfast sausage mix into some homesewn muslin bags and hang to cold smoke first, then bring up to temp(140).After cooling and hanging for a day, I want to remove the muslin case and slice into patties then freeze.Will have the appropriate amount of cure#1 mixed in with spices.
I have never used muslin, and my biggest question is, should I soak the muslin bags before stuffing, and how do I prevent pulling any meat away when I remove the bag after its all done?
If anyone has done this, I would like to hear about it and what your results were.
