Good morning friends,

I have a couple questions.   What size and type of casing would I use for breakfast sausage links.   I like the size you get in restaurants.  I have no clue of the metric size measurements.   I'm just to old to learn new tricks I guess.  Thanks to everyone in advance

Thanks for the help.   I'll probably splurge for the sheep casing.   I don't know anything about the collagen casing.  Being new, I should get a small amount of them just to see what the texture and feel of them is like.

21-24 sheeps are the size of a normal hot dog. The 24-26 is the size of thick hot dog and what sausage usually is in diners up north. If you are talking about country sausage like they make here in NC I would use a 32mm natural hog casing.
