I been wanting to do this since I watched Kent Rollins make them. Never feel up to the challenge in the morning so did it for dinner. Used that Cumberland sausage.

Great idea . That's my kind of breakfast , and it looks fantastic .
One time when I was in Cancun , I went to breakfast . Told the head chef I can get scrambled eggs and pancakes at home . I want what you eat for breakfast .
I ate tamales and refried beans for breakfast for the next 6 days .
 
We eat layered or stacked enchiladas that are made much the same as lasagna but with beans, meat chile sauce and cheese, and flash fried corn tortillas Layered. Not individually rolled. The only difference sometimes from supper to breakfast is a fried egg on top. So delicious. Red, green or both for Chile called “Christmas “ half red and half green Chile.

Ditto. I lay a layer of sour cream in them too. Tastes real good 24/7
