So the Boy successfully completed his medical lab rotation on Friday and therefore officially graduated with his BS, so we had his celebration dinner tonight!

The wife and him went on a 3 hour 8 store hunt for some grub to cook up…..this is what they came up with…..we called them the “boneless tomahawk”!

At 32 oz each they were massive!

Started the prep yesterday with some kosher salt and in the fridge to dry brine….

Going to smoke these just like I do my prime rib roast……@ 235…. I’m using my Throwdown prize RFX for these so I can watch the temp on the grill when they sear….

So while the recteq was doing its thing I prepped the side surf…..snagged these at 6 bills each….

Just a happy camper!!!! I did touch them and licked my fingers…..yum!

@ INT 118, I pulled them and then brushed them with kinders buttery steak house, fresh herb butter & Olive oil mop…..

Now stage 2……on the Weber to get some searing and for the finish INT…..

INT 130…..time to pull and rest in the house oven @ 140 while everything else finishes…..

The lobster INT here is 135 so just a bit more till 145…… pulled at 145 and then in to the rest oven with the beef…..

Next up is grilled broccolini…..quick blanch then tossed in the seasoned butter drizzle and then on the grill for some char…..

So after all that here is the meal worthy of the boys efforts and success…..
The grilled goodies are joined by my wife’s Marsala mushroom orzo….the boy did the shrooms…..

After a two hour resting period the wife is just finishing up some bread pudding……that will come next….😉

Yeah what a wonderful celebration cook & meal. Holy cow. Those pics & that plating are really good.

Well civil, I’d say the wife and son did great… what a fabulous looking meal. I could eat that any day of the week. Also, Congrats to the son on graduation. And for the spinner ride… very well deserved buddy!

Many thanks Rafter! The boy enjoyed it and has a look of relief on his face now. He still needs to pass the Board test to be official on the medical side but I believe he has that covered.

PS been thinken about crawfishen.....its getting about time to fill the freezer again.....

Much appreciated Red! Yea it's hard not to enjoy a steak and lobster dinner! At $6 each its about the price of a burger these days!

LOL! I will pass it long to Mrs Civil for sure! As I mentioned above its getting time for one of her "boat lunches" while watching over some metal traps......

If you’d have us again… Pete and I are looking very forward to it. Been thinking of some craw fishing… Can’t believe it’s that time again.

Thinking some Craw Chowder this go around! We love clam chowder!
