My cousin is back from Montana and she brought these back for me to prepare on Sunday. I've never cooked or even seen these before. Does anybody

Looks like some great shorties. As others said just treat it like a brisket (or bone-in shortribs in my experience). I would wrap for the last couple hours to prevent drying out due to lack of bone.

Edit: i have done boneless before, they smoke up just fine.
