Boneless short ribs..... burnt ends?

I love smokingthe chuck and plate short ribs I get at restaurant depot. Just saw bones short ribs there and was wondering.... how would they be for making burnt ends? Seems like they’d be similar to brisket point. Anyone ever try this?

It sure will work. I smoked some of these. After they were tender , smoker and delicious, I pulled the bones out. Rather than cubing, however, I cut into thick slices and glazed. They were actually much richer than brisket. Made killer sandwiches. So go for it. No reason that “burnt ends” would not work.

Here's the before and after of some boneless beef ribs I did yesterday. Adolph's and fresh cracked pepper. The plan was take them to 160 IT then braise them up to 190. Had to switch to the braise at 140 because it started to rain and I didn't feel like finding out what happens when you run an electric smoker in the rain. Couple of the ends were a little tough but otherwise came out pretty good.
