Ok so when I was in the grocery store today I picked up a boneless pork shoulder picnic that has be rolled up and tied. Looked interesting enough, now for my question. Can I leave it tied up for smoking? Should I untie and put rub in it and tie back up?

I also picked up leg of lamb and chicken quarters. Any advice on any of these will be greatly appreciated
 
I'd leave it tied up myself. I do boneless butts and get them untied and tie them myself. Once they're tied up nice and snug, I put my rub on. I don't season the inside, but you can. I have before and it's all good either way. It's just less messy for me to open the package, rinse the butts, dry, tie, and season.
