Boneless Butts...Do I cook these differently?

I bought my butts for pulled pork at Costco and noted they were boneless. all my previous butts were bone in. So tonight in prep for tomorrow i am planning to trim and rub.

I have a two pack of boneless butts weighing in at 15lb total.

Questions I need help with:
  • when I open the cryo bag are these going to be "cut up" like and be all "falling apart"?
  • Cook the same as bone in?
  • Any variation I should plan on or change my plan for?
My plan is cook both tomorrow 180 for 3-4 hours then up to 275 till done.
 
They won’t fall apart into separate pieces but the will spread open leaving small thin pieces. I use butcher twine to tie them up into the original shape.

I actually like doing the boneless. I can get them pretty cheap by the case at GFS here locally. They shouldn't fall apart when you open them. The thing I like is that I can get the rub all over the inside where the bone was cut out. I just rub them and put them into the smoker fat side up. I've never bothered tying them and it's never been an issue. Cook the same as you would a bone in...

and they were very cheap IMO $1.99 a pound. I used to shop exclusively at my butcher. But I cant afford that anymore. Costco is just so much more affordable!
 
I have only cooked the Costco boneless ones once and they cook just the same as the bone in. Picked up two bone in the other day on manager clearance for $.95 lb at the grocery store!

Great point on the ability to have run on more surface area. I have been buying mine for quite awhile at GFS too.

Sure wish our prices would get somewhat in line with those. Have been around the $2.79 stage, grrrr....

Wow that’s steep for sure. The normal price at GFS for a two pack of butts usually runs me $1.49 / lbs for boneless. My small local butcher does bone in by the case at $1.39.

did you tie it back up or just rub all that you could and lets splay out as is did on its own?
 
I just rubbed them down(injected with AJ as well) and let them roll. Turned out great! Glad you posted this I need to get some boneless ones to make buckboard bacon out of
Just used my last pack from March. This is my next project too.
