I have that same stuffer tube. 3/8” O.D
Yes full time in smoker, being small mm casings they didn't take long, around 7 hrs to get to 153*Looking good!! I like the texture, did you finish them in the smoker? I'll use the hot pepper Idea when my Bloody Mary mix arrives. Bottoms up!!
YeahBGKYSmoker , ever just use commercial jerky seasoning to make snack sticks? Got tons of jerky seasonings and just wondering about using them. I know most brands have specifics for sticks, not sure the difference in ingredients.
Might try just shooting the sticks out naked on Q mats . Not sure if they will tend to dry up to much on the outside getting to temp.
Opinions ?
