I was so pumped to finely be able to get fresh pork blood. Blood sausage here I come. Went with blood and tongue recipe. Got every thing exept the potatoes flour. Looked and looked. No dice. Found box of dry instant mashed potatoes and why not? Skined and Brined the tongue for a week. Got everything together,stuffed,vacuum sealed and SD at 165 for 31/2 hrs.cooled and in the fridge overnight. Later pm. Cut into one. So disappointed. It fell apart.what could be the cause?
