My mother-in-law lost many tree limbs off a black walnut tree yesterday in a storm. Before we get rid of the limbs I wanted to check in and see if anyone has any experience smoking with black walnut?
If it is worth saving for smoking I was thinking of splitting the limbs and letting it dry out till fall; I have always purchased my chunks and chips. Is this the right way to age smoking wood?

Here is what I have heard, although I am sure others with more hands on experience will come forward with more practical advise...

"Walnut is best used for red meats and strong tasting, heavy game because of the strong and somewhat bitter flavor it provides. It is often mixed with woods with milder flavors in order to provide a more subtle flavor to foods".

I haven't used black walnut but I have used english walnut and that was AFTER everyone said it wasn't any good ,SMF has a thread on woods you can check in it if you like. And by the way , the english walnut was just fine I mixed it with oak on pork and I'm still alive and Smoking !!! :)

Just my $ .02......there's a reason you don't see walnut chips/chunks in your local store that sells hickory, apple, mesquite, etc....

Walnut is beautiful wood for furniture and such, but in my opinion is too oily to make a good smoking wood.....even if it's well seasoned, oils don't evaporate out of the wood.

take it FWIW,
Eric
