Black Walnut/white oak,Korean shortribs,chicken thighs,tilapia in the snow

marinated the beef ribs 2 nights in bbq sauce, marinated the chicken for 1 hour in concentrated pineapple juice and squeezed a lime and spices over the fish. Took about 2 hours 15 minutes and that’s with the meat in the pit before starting the fire. I crank it up tho. 45 minutes in it was only at about 200 so I cranked it up from there trying to hit 250 or higher. Used about 50/50 black walnut and oak. The walnut was from a chainsaw carving I did yesterday and it’s the chunks left over

I used the chunks on the left of the chainsaw and carving. My smoker modest size at about 55-60 gallon and well insulated and has fire brick inside so it conserves wood very well. Went through that in about 2 hours with some oak.

Finish product is a fish club for fishing this year very soon. I went about 2 weeks ago but nothing

here’s the last fish a cought. It’s a really big 3.1 pound northern pike minnow. November 10 and I’ve went a dozen times easy after that but I’m not a very hot fisherman yet lol

This one out of oak is even bigger. You should see the one I’m making for the sea lion since I like to chase him around everything I go fishing. I used to go everyday after work till it hit day light savings few months ago.

Btw I took the skin off the chicken and pounded it with the meat tenderizer and It made it cook much faster
 
I am far from an expert on any aspect of smoking but I wonder about Walnut for smoking. When I used to work in a millwork factory farmers would haul off our sawdust for animal bedding and mulch, but they wouldn’t take it if it had any walnut in it, claiming walnut was poison to animals and some plants. I don’t know just thought I would mention it.
 
Same thing with cherry. A guy told me the bark of a cherry tree is like candy to horses and it will kill them. Then another guy told me it was cows is what it’s bad for, Idk. It works good in the smoker Tho. Kinda like chocolate is bad for dogs but not humans. Even the fish was pretty good if I didn’t over cook it. Not too Smokey at all!!

They do say the walnut will kill horses tho. I think it suffocates then
 
Walnut is harmful to many other plants, not sure about animals. Cherry isn’t good for livestock. My father taught me to never do vegetables near walnuts as the roots are toxic to most garden plants.

I was curious about the smoke flavor of walnut. Never heard it used for smoking...what’s it like?

AS for Dust & Animals:
I never heard of any of those problems, except Walnut Sawdust in their bedding is not safe for Horses.
It can Kill them. They absorb the poison through their Hoofs. It's called "Laminitis".
Only people who used to take our Walnut Sawdust was for their Cows.
People with horses wouldn't take it.

Beautiful!!

Yes, be careful with that black walnut. Carpenters always need to wear a dust mask because the dust can form a type of black lung. Not sure on the smoke.
