nothing like a crispy crust of a blacked burger. add in a few surprises like blue cheese on the inside and bacon chopped up and mixed in the meat.

cook bacon thoroughly but soft.
chop bacon into 1/8" or so small bits.i use 2 strips per burger
mix bacon into meat.
separate beef into patties.
take each patty and separate in half.
form 2 equal patties
place blue cheese over one patty -not to close to edge.
place second patty over it, blend edges so it looks like one burger patty again.
coat the top with course ground black pepper and course Ground sea salt.
coat to taste. i use a 2-1 ratio. 2 tsp pepper/1 tsp salt ( must be course ground). i eye ball it mostly.
pre heat pan/skillet. place pepper salt side down to form crust. 2 mins.
flip over and finish cook.
pull off when medium. let set for 5 min.
i don't serve with toppings past lettuce or tomato. guess can add there own condiments

- 4 tbsp crumbled aged blue cheese
- 8 strips of bacon(2 per burger)
