So my Birthday is Monday and my wife said this is my weekend to do what ever I want.. Humm... Smoke a Boston butt .. So off to the store I go.. I'm stoked!!!!

9:45 the Butt is injected and rubbed and in the smoker

Two hours in. Temp dropping a little 225 .. Adding some wood and lump

6:15 IT 190 took it off warped and sleeping in the cooler. Super great smoke 9 hr at 250

Side note:
I always do my smoking in aluminum pans
Two reasons .. It. Makes handling and clean up easy and more important I get to capture all the fantastic meat drippings. I take the liquid and put it in a glass jar and into the fridge
The fat rises to the top which is taken off
And all that is left is the yummy au jus that is heated up and mixed into the meat..
