Morning all. Been a busy week here as I decided to throw a surprise for my lovely missus and figured I would do the cooking for it. The hardest part was trying to figure out how to do all this food up without arousing any suspicion from the birthday girl. Fortunately, about the same time I started thinking this up, my niece decided she was going to open up a deli/bistro. So under the guise of me doing up some smoked items that could be used as weekly special, I now had my cover story for all the food. Niece helped everything along by saying she was planning a " soft open " for May 31st and would need the "samples" for then. Missus didnt question anything and now everything was falling into place.
So starting wednesday, the cooking began with PP and ( after reading all the rave reviews) decided to try Dutch's baked beans. And yes, I and 50 other people have now joined the ravers list.
Thursday night was pastrami night. Don't know if anyone else does this, but I have taken a liking to injecting before I do these with maple whiskey, brown sugar and butter. But I do a quick burnoff to knock back the whiskey content. 40-50 secs
Base layer of SPOG, then topped with Mccormicks Smokehouse maple
Decided that I was going to need more capacity to pull this off and decided to go shoplifting. Smoking isn't big around here so unfortunately, selection is limited. Ended up buying an OBS and eye of round roasts went on sale. So while the OBS was seasoning, figured I would get the BSK warmed up for the roast by smoking up some burgers with peameal bacon. Roast beef and aus ju courtesy of JJ. Which is delicious by the way
And the OBS fatties. Sorry forgot prep pics. But ground pork, seasoned, with provolone, shaved ham, pineapple chorizo, and chipotle. Outer seasoning used Three Little Pigs Touch of Cherry.
