Looks like my Turkey is gonna be done a couple hours early. Any suggestions on how best to rest it until the gathering is ready to eat?

Skin will suffer a bit from this, if you got it to crisp up, but you can do the foil/towel wrap and cooler trick, like for a brisket or pork shoulder that's done too early.

All turned out well. Appreciate the advise. [emoji]128077[/emoji][emoji]127995[/emoji][emoji]129411[/emoji][emoji]133674693112[/emoji]

Glad to hear that!!! Any time, smokin' friend...any time.

Did it come out on time, or did you wrap to rest?

Eric

Well strangely I re-probed the turkey and the temp. dropped 10 degrees and stayed constant...so I had s but more time than I what I initially was thinking I had. This isn't the first time this has happened. At any rate I did wrap and rest...for about 1/2 hour. Folks really liked the smoked bird compared to the injected bird I cooked in the masterbuilt Butterball electric oil less fryer...it was good, but you can't match that smoked tastes with any injection concoction.

Oh and skin was not too bad considering it all.[emoji]128521[/emoji][emoji]128076[/emoji][emoji]127995[/emoji]
