Yesterday I invited some friends over to test some of the BBQ ive been making. I smoked a 7 lb brisket and 4 racks of baby back ribs. Also grilled up some wings with some recipes I have been perfecting. For my first brisket I was actually surprised with how good it turned out. I truthfully thought I messed it up. I started at 530 AM and it was around 5 degrees out. The smoker jumped to 350 degrees real quick and it was a battle trying to keep a consistent temp. It was a roller coaster of a day, but I pulled it at 202 after 10.5 hours , and let it rest for 2 hours. I learned a lot from this site so I figured id share!
