I wanted to do other things in my smoker besides jerky. I was thinking of buying a single electric 1000W burner so i could bring the heat up to atleast 200*. Does anyone have a recommendation on what type of burner I should buy. Also thinking of buying a AMNS for some cold smoking which would smoke for at least 10 hours. Thanks guys.   Jim
 
I would guess (GUESS!) that an inexpensive hotplate coil type would suffice, with a pan holding the wood set on top.  The fly in the ointment is the control and plastic housing will be inside the smoker, subject to heat and smoke it was not designed to handle. Also the power cord would be partially inside the enclosure if you wanted it centered for even heat distribution.  It could pose a fire hazard.

X2..........A hot plate, and AMNPS will put you on the right track. I have a Big Chief and also made an insulation blanket for it to hold in the       heat.
