BGE maiden cook- Pork Butt

Finally got the BGE cleaned up, ready to cook. Decide on a small pork butt, about 8#; 3.5-4" thick. Got the BGE lined out, fire going and stabilized. Let her burn for about 30 minutes just to burn out since it has been a long time since she's been cooked on. I am running about 6-8# of charcoal plus 5-6 chunks of cherry wood. lit on one side to just let it burn across the fuel.

I am using a local rub. LeBlanc's Gunz and Roses. I like it a lot. Great flavor. No binder, just heavy coat of rub, plus extra on top the fat cap...

Put the pork butt on. Holding steady @ 265*F at the grate, 280-285*F at the top...

3 hours in...looking good... I expect 8-9 hours on the cook at 265*F...but we shall see.

You are off to a good start. One thing I do with my Eggs is to layer some pellets within the lump. Then as my small fire grows it finds a few pellets.
I just dumped about 2 cups of fruit wood pellets through the grate onto the coals in 3 spots....she's back to smoking now.

I've had Eggs well over 20 years and I started by layering wood chips into the lump because pellets were harder to come by. Both work, but I like pellets better.
 
So I weighed the bag of charcoal I poured from. I put 5.25# of lump charcoal in the BGE. It has been 7 hours, still running steady. I have had to open the bottom yet a little, but still holding 265-275*F at the grate.
 
I keep my Pecan wood (2" dia. and above) in about 6' lengths from a few trees were harvest... I keep a gallon bucket with chunks (pucks) cut up from those... When I need more I cut up a few more of those limbs...

I'm along for the ride...
 
Also... If I know I'm going to wrap at some point... I only put the chunks in the first half of the burn.. As time goes you will see the flow of the burn to distinguishe where to put the chunks for the first half of the burn...
 
Nailed it! Nice clean bone. I don't have an egg anymore but when I did I really loved grilling steaks on it.

Thanks jcam! I could not pass up a BGE for the same price as a new Akorn Grill...I have had steaks off my buddies BGE, which is why I am looking forward to steaks on mine! LOL! And if I find more chanterelles...oh my......
