I have only tried beef ribs once in my life a few years back while at a PPG training course in Kansas City 2 years ago and the only thing that impressed me was the size of the rib. Flavor and tenderness just weren’t there, or maybe I’m just more Memphis style and not so much KC? Either way, done my first beef ribs and WOW!
Rubbed with Montreal Steak Seasoning, smoked at 260 till they probed tender at 199(was going to try for 203 but didn’t make it) and I may have have just reached food nirvana.
 
Those look very good. Pork ribs are my favorite but I have been getting some good things done w beef ribs lately. Have a bite for me please
 
And before I get crusified by some KC BBQ lovers, I tried a sampler plate with I believe, beef rib, pulled pork and either baby back or St. Louis style rib and while I can whole heartedly agree it was good, it just wasn’t what I expected from good ole back home Q.

Will do! For a first attempt I have no complaints! That’s why this forum rocks, no matter what I have in mind for a cook I can always get the good, the bad, and the ugly right here. People share their triumphs and fails and I can learn from all of it and I almost always have phenomenal cooks!

Those beef ribs look nice and meaty. It's hard to come by nice ribs around me, kinda like bones with some scraps of meat hanging on. Yours look spot on!

Believe it or not, most beef ribs round here are not very appealing. I think they are all referred to as “back ribs” or “shiners” (those who know more than I can correct me) but these were 2 sets of ribs in 1 package the top layer was very meaty and impressive, those underneath, meh, not so much, but I can work with it

That has been my problem as well. They are taking so much meat off that I'm getting more bone than meat.

It's a shame. I remember as a kid enjoying beef ribs more than pork ribs.

Those look good, I got a couple of packs I snagged at Costco a month or so ago when I saw some good ones and a full packer in the freezer, been dialing in the new smoker before putting $100 worth of beef in it.

The beef flavored punch of beef ribs is hard to beat, especially when accompanied with a shot of smokey goodness from perfectly rendered fat. excuse me I got caught up there for a minute LOL

I’ll definitely do these again if I come across some decent looking ribs. Seen some meaty looking short ribs but the store was awful proud of em. To feed my bunch of 7 I’d have to take out a second mortgage.
 
LIKE. Totally jealous as no beef ribs around me. Anxiously awaiting the next rib roast so I can harvest... I was also told to save and use the rib bones for soup.

Thanks. I never thought of saving the bones for soup.
 
Meat cutter buddy of mine swears that one of the best things you can ever eat is cracking them open and simply spreading the marrow on cracker. Not sure how easy to do but also plan to try at least one.

I’m not quite sure how I feel about marrow, but I reckon I’ll try bout anything once.

Yeah, I’m a big fan of it myself. Almost went with the usual rub I put on everything else and remembered I had this instead. Thanks for the like also!
 
Those look great. What was the starting weight and how many ribs? One rib per person?

You know, I’m not real sure on the weight. I seen that the top rack in the package actually had some meat in it and I guess in the excitement I completely forgot to check. I’d honestly say that 2 ribs per person would be about right. There were 7 bones total and I’m gonna feed 7 with it but we’ve got 2 sides, 2 smaller children and a couple with smaller appetites.

I may have to eat my words on this one :D I peeled all the rib off the bone to make portioning a little easier and everyone ate till they’re about to bust a seam and there are still some leftovers! Here’s a plated shot on the “fine china”, anything that doesn’t have to be washed is fine with the misses
