Best Temperature For Smoking

Hi All,

I've got a Smith & Wesson (Traeger) pellet grill with a digital thermostat. Traeger makes two digital 'stats -- one with a low temperature of 180, and one with 225. The next step up on both is 250. Both have a timed smoke mode where the temperature is not controlled, but for the purpose of this question I'd like to focus on the temperature controlled mode only.

Given the choice of smoking at 180 or 225, which temperature would you choose, and why?

I would go with the 250.

Depends on what you are smoking, but between the 180 and 225 choice, go with the 225. At 180 you will have a heck of a time getting a butt up to 195............
 
Yepp. Not much difference between 225* and 250*. I shoot for somewhere between those temps for everything except fish.
