As JJ said bone on is an experience. Its really personal preference, I cut them off cause I like to roast them differently or may Au Jus with them. Cooking it boneless at 225 won't affect the juiciness, but being a little smaller cross sectional will reduce cook time.
That's good info Civil. I keep rereading your Au Jus recipe, which is wonderful BTW. I have made some boneless PR's and they were good. Next time I may just do this with the bones off, and take a stab at that Au Jus. Thanks.

That's so true. Been smoking for about 14 years or so. Married 35 years, and when I can get a thumbs up from the Mrs. it's a thrill! Literally. I love cooking too, but so gratifying when those you cook for really love it.
Except this Covid year, we have a small Company Christmas party, less than 20 of our employees at the office, very informal. Everyone brings a dish, mostly homemade and we all share. I always make a rack or 2 of Spare Ribs. They go crazy over them and it makes me feel very happy. The Ladies in the office ask me ahead of time each year if I will still be making them for the party. I rarely get to cook for others outside of the immediate Family. So when I get to see their reactions, it's great.
 
This was a rare price, 3 weeks ago their "sale" price was $8.99/lb. This time $6.99/lb, which is about as low as we're gonna get round these parts. Thanks for the like Travis, very appreciated.
I just checked some ads and our Aldi has bone in choice for $6.99lb this Wednesday only. I may have to take a trip over there.

That seems to be the right price. I've had Steaks from Aldi and they were fine. This one I got from Kroger was Choice.
 
Thanks JJ, it's funny, she always uses 5 lbs, unless we are having a big shindig. Even now it's just the 2 of us most of the time, still makes 5 lbs. She says she can't reduce the other ingredients properly in order to use less than 5 lbs. It wouldn't taste the same. I believe her.

Same at our house hard to adjust somethings.

Beautiful piece of work on the RR Mike, cooked perfectly all the way thru, big Like! A nice call on a little thicker cut too, I think you get a better flavor that way for dinner, thin slice leftovers for sammys. RAY

I used to leave the bones on, but I started cutting them off years ago, and leaving extra meat on the Bone side of My cut. Then I save them until I have about 6 or 8 pairs of Dinos with extra meat on them. Then Smoke or Grill them more done than I do the Prime Rib itself, because I like my Beef Fat nice a browned & crispy.
I like Med-Rare Beef & Well Done Beef Fat!!

Thanks Ray. Exactly right on the slices, thicker = more flavor at dinner. Tonight we used the leftover thinner slices for cheese steaks. Good time was had by all. Thanks for the like.

Looks amazing Mike! Love the thick slices! And those potatoes look delicious! Showed it to my wife and we will definitely be trying them. It kinda reminds me of her grandma's potatoes, a little different but it took her 2 or 3 years of trying until she nailed it. And definitely know what you mean of them holding in the heat!
