Great looking cook for first shot on a new toy. Yup practice will help and keeping notes as said earlier. Also weather will have an effect on how things can go. Yup we have all had at least one cook that didn't go right or more.

Looks great! Not new to smoking but I’m new to stick burning this year too. I’m learning more and more to not sweat the temp fluctuations. Smoke looks excellent out of that stack!

Thank you. Yes, in the past on the old Char Broil, I would have been panicking. I wasn't exactly calm when I was near 350° the other day, but I just tried to ease the temp back.

I did leave the exhaust full open. Never tried to choke off the fire. Just open the cook chamber door momentarily.

Later in the cook, I was figuring out that the side damper could be nearly closed and I could really get the temp to stay where I needed it by using the ash dump on the bottom of the firebox to modulate the airflow.

I have one tuning plate that Craig made for me. Probably need to have a fabricator near me make one or two more for me to really get it dialed in. That was part of the issue the other day was I tried this cook w/o the tuning plate.
