for those of you who use the beer can method, do you simply set the bird on a beer can and leave it or do you buy a beer can holder? Last year I set my two turkeys on a beer can. one fell over during the process. I found a beer can holder on amazon for $6.99 that says its good for a 4 lb chicken. My turkeys will be 15 lbs but i WOuld think the holder would help keep it upright. Opinions?

Drink the beer and throw the cans in the trash or recycling bin lol.

Get one of these types of vertical TURKEY roasting racks. It will work for chicken as well but will definitely be big enough for turkey so they don't fall over. Best of luck :)

I use a turkey cannon ($20 Amazon) when I don't spatchcock turkeys. Its a form of beer can holder. The one Tallbm posted is usually less expensive and works just fine. Make sure you get one for a turkey though. I use a double holder like that for chickens. No beer can is needed.

The beer can impedes even cooking and does nothing other than that.Follow instruction above, use rack-NO CAN

So the beer can (or liquid) does nothing to keep the bird juicy?

I believe I have read in the past that there is no evidence that it helps with juiciness. Please double check this for yourself.
I know what works 100% to ensure a juicy bird.
Brine or Inject and cook to 160-165F IT in the breast. Brining or injecting will ensure tasty meat as well juiciness, even if it is just a Salt + Water brine (my usual simple brine). Not overcooking also ensures you don't dry it out.
Bland and/or dry breast meat is the pits lol. :D

Beer can chicken is a fad and a farce, however vertical roasting is not.Google "debunking beer can chicken" it is a very scientific approach to the subject.

I did a "tipsy chicken" using an earthenware dish made by Tumbleweed. Beer and spices in the center well. It was the best smoked chicken I ever had. No brining. 20181103_204026.jpg
