Beer and Garlic German Venison sausage

    Got a doe mule deer at camp this year.  Decided to make myself a bunch of sausage.  Yesterday I made 12 pounds of fresh cheddar brats, and today I am making smoked beer and garlic german sausage.   I did 1 part venison to 2 parts pork butt.  I used a Hi Mountain spice kit with natural casings for the most part.  I ran out in the last of the fifteen pound batch and had to use a few links of callogen casing.  I used beer instead of water, and added about 10 large cloves of fresh garlic to the mix. The fry test was very tasty, so off to the smoker they go.  Going for an hour at low temp to dry then bumping it up with some peach and hickory for the smoke up to 152°   Can't wait for the final results!

I'm in Colorado Springs so let me know about 2 hours before they're ready and I'll be there!  Kidding aside - would like to know how they turn out.  Didn't get an elk this year but going to Oklahoma a couple of times this fall/winter hoping to get a couple of whitetails then it's off to the grinder for brats and snack sticks.

    Out of the smoker and cooled off in an ice water bath for a few seconds.  Fried one up with a bit of butter in the pan, and all I can say is wow..   I am in love..   Fantastic results.  The smoke added such a great dimension to this recipe.   I am super happy I have enough to do another 15 pound batch.  I have no doubts the family is going to love this stuff.  My 2 Year old meatatarian already consumed an entire sausage.  Time to split it up and vacuum seal it for the freezer!

    Good luck chasing deer in OK Colorado007!  It was a rough year in the mountains for second season.  I was just REALLY happy I picked up a doe tag this year.  Only two of us brought home meat out of six in our camp and those were both deer.
