Beef stew comfort food

Not smoked, but still mighty darned tasty!
I recently stocked up on beef while it was on sale, so thawed out a hunk of ball roast and diced it up for stew.
Pretty much just old fashioned stew without a bunch of modern additions. Just meat, potatoes, onions and a few carrots.
I made a big pan of homemade biscuits to go with it and ate until I was full as a tick!

Add a few stalks of celery and a beer in the pot and you have my recipe.

I'm as guilty as any for over complicating things, just ask mrs. S-met. But simple is all that is needed with a good piece of meat.

Thanks. Some folks get all "chef-y" and add way mote ingredients than neccessary that to me just muddy the taste of already good food. The beer would be great, but i dislike celery as too much of it and it seems to rob the other flavors, or perhaps it simply overpowers them. My late Mother in was a huge celery fan and always overloaded her cooking with it.
 
WHATA YA MEAN GET ALL CHEF-Y!?!
What, just because I would Tourné the Root Veg, making sure to include, Celeriac, Parsnips and Candy Cane Beets, with Tri-Color Carrots and C sized New Potatoes? I mean who doesn't start with Roasted Beef Marrow Bones, simmered 24 hours ahead to make a Rich Brown Demi-Glace to Stew the meat in? Everybody knows the Flavor comes from first browning a bit of Imported Italian Tomato Paste in rendered Beef Fat, Deglaze with a French Armagnac, reduced Au Sec, then add the Bouquet Garni of Fresh Thyme, Leek Greens, Bay Leaf, a single Bruised Garlic Clove and Black Peppercorns! Doesn't Everybody, cook each Vegetable separately to near optimum tenderness and flavor, then combine them to finish cooking all together with the Beef in the Sauce? Nope, Nothing CHEF-Y about it! Just a Simple Beef Stew...JJ

BTW...Your Stew looks Terrific!!!

LOL! No insult intended there chef-y J. when I walk in to a good eating establishment, I expect "Chef-y", but not in my humble abode. Besides, I don't have the culinary skills to pull off "Chef-y", or even know if I typed it correctly:emoji_laughing:

LOL, No offense taken! I was just playing around. Yes, I described a Beef Stew I made for a graded Practical Exam, got an " A ", and have made it, occasionally, for Company but, I don't go through all that trouble on a regular bases...JJ

It gave me a good laugh, and a much needed one right now. My best friend in Tennessee is in a crisis right now and I can't sleep until he lets me know he is ok

Your stew is simply fantastic! That’s a goood winter warmer stew right there, and that biscuit has settled in nicely to it’s proper home.

Sometimes you just can’t beat simple. I’d like to think a lot of the stuff I make isn’t complicated.

One of my peeves is when people review a recipe and go “It was outstanding but I added this, doubled this, substituted that, didn’t have this so I used x instead.. etc, etc”...I think to myself “why even bother to leave a review because it’s an entirely new dish!!”
 
Darn good looking stew!
The temp here has been in the 90's everyday.
Can't wait till it cools down a bit so we can start to make stews & chili!
