Beef short ribs

Had the family over today, got up at 7 and fired up the fatboy. Did 4 racks of 4bone Chuck short ribs and one rack of baby backs.

The beef ribs were cooked at 250, for about 6 hours. Baby backs took about 4.5, and we did some turnip greens with home made bacon and a creole tomato salad.

Beef ribs all trimmed and ready. I rubbed them down with worchestichire and black ops brisket rub.

The beef ribs went on at 9am. Plan was to cook uncovered until bark was set, then steam in a foil pan until ready. I did glaze two racks of beef ribs with our favorite, Zea style Thai chili glaze. Then finished off with an herb blend of cilantro, basil and green onion, and some toasted sesame seeds. Lemme tell ya, that glaze was off the chain. Everyone loved the Thai beef ribs!

Here they are coming along nicely. At around 11, I added the baby backs. Rubbed down with Malcom reeds the rib rub and ultimately would be glazed with blue hog smoky sauce.

The greens were fantastic. Homemade cherry bacon, fresh turnips...you talk about good!!

Thanks J! I’m sorry I didn’t get any pics of the salad. So good, and simple too. Wedges of creole tomatoes (star of the show), diced green onion, salt, pepper, oil and red wine vinegar. That’s it!

Looks great! I was planning to do beef short ribs today too... but plans were foiled. Went and picked them up at Costco last night, got the smoker ready this morning, opened up the ribs to get them rubbed and it was a big fat NOPE! They weren't past the sell by date but they smelled like rotten eggs. Had to take them back.

That’s a bummer kevin. Make sure you do them soon, I still can’t get over how much we enjoyed them.

Saint those are some beautiful looking ribs man! That thai chili sauce you added sounds amazing. I would like to give that a try soon. My wife would go nuts over the greens.

Thanks SmokinVOLfan! I'm telling you, the more we use that thai chili sauce, the harder it is to ise anything else. I was somewhat hesitant to use it on the beef, but it was excellent.
