Beef Short Ribs - Weber Kettle

Wife bought some beef short ribs from the local Wal-Marts. Decided to smoke them on the Weber kettle using hickory chunks. I used worsh sister sauce as a binder and a brisket rub I got from JLinza JLinza as a Christmas gift. The last 15 minutes of the cook I mopped on some Tiger Sauce.
These turned out awesome. Love the rub I got from JLinza JLinza . (who is from Colorado, where the beer flows like wine). Wife also made Ozark macaroni salad to go with it.

Those right there are some EXCELLENT ribs!!! :emoji_clap:

We to are lucky to have the local Walmart start carrying black angus cuts including brisket point cuts and such. They have been the go top place for steaks as of late!

Looks like a great cook and meal!
And sounds like you've have a regular supply. Hopefully ours will start carrying them. They are sure starting to have a good variety of cuts and grades.

Looks great! Is that iron plate in the kettle custom? I haven’t seen that design before 🤔

I was also gonna ask about that SNS mod with the plate welded to the SNS...but WaterRat WaterRat beat me to it. Is that a homemade mod, or something available out there I didn't know about?

Yes, custom made for the Weber kettle. Pretty heavy duty. Works awesome.

Oh yeah I'd take a plate of that. looks great. Please let the dumb Yankee ask... Ozark macaroni salad? Please enlighten me. I love a good macaroni salad.
We love Ozark macaroni salad:

Ozark macaroni salad

16 oz elbow macaroni

4 oz jar diced pimentos, drained

2 cups diced ham (optional, we usually leave out)

1 lb cheddar cheese, cubed (we usually use a lot less)
1 1/2 cups chopped bread and butter pickles (or can use sweet relish)

Dressing:
2 cups Mayo
1 cup sour cream
2 tablespoons prepared yellow mustard

4 tablespoons sugar

1 teaspoon salt

1/2 teaspoon pepper

About 1/2 cup pickle juice (opt.)

Cook macaroni. Combine dressing ingredients. Add dressing to macaroni, chill in fridge.

I have a plasma cutter in my shop and I have access to scrap metal at work.
I can’t remember the thickness of metal….maybe 14 or 12 gauge?
It actually holds the heat pretty well….around 250 for a good 4.5 hours.

Edit: I just measured it: it is made out of 10 gauge metal!
