Beef Ribs

Threw some beef ribs on 6hrs of smoke just in time for kick off. Go canes!!!!

For those of you like me that have a hard time finding beef ribs with a good amount of meat on them. I have found that many places have good beef ribs but oddly I never see them out front on display.

I've learned that you have to ask the butcher if they have any racks of "short ribs, uncut". Normally they get them vacuum sealed and they are in two parts 4 ribs each.

I've found them at Publix and Sams so far but again never on display but in the back with the butcher.

Just SPG. but I did mop it every 40 mins or so.

It was a simple mop but basically it was:

- Tallow from the last time I made a brisky or you can use lard
- Onion
- Green pepper
- Jalapeno
- Paparika
- Garlic
- Salt
- Pepper
- Red pepper
- 2-3 cups apple cider
- cup of water

Cook down the veggies in the tallow and then add the other ingredients and simmer.

Costco here usually has them.

But to your point - the butchers at Costco can be very helpful. always worth asking. I have asked for more briskets to look at and he pulled a few case for me to shop on.

My "local" butcher (its a 45 minute drive) always has them but they are quite expensive there. Love the place, but it hurts to shop there.

I wish I had a costco near me b/c I've consistently heard they are better than Sams for meats

A buddy of mine has had both Sams and Costco and he thinks Costco is a little better.

My Costco is about 40 minutes away, Sams is next door to them. I just bring a huge cooler and fill the truck when I go..
