Been craving beef ribs lately and had time today to smoke some. Seasoned 3 racks with spog
and on to the smoker at about 250 with pecan
Let it roll checking at 2hr
Coming along nice. Did not spritz but did wrap in paper when I liked the look. Pulled the rack in the right around 6hrs.

Bite was clean and i am sated
2 other racks are still smoking waiting for probe tender.
