Hey guys. So I got some beef ribs this morning and just threw them on the smoker. Well, they're a little too big for my smoker and I ended up overlapping them. Is that bad? I figure since it's a smoker it shouldn't matter that much, but I'd just like to know. Here's a photo

I've never done that with ribs, but in the past when I simply had too much meat in the smoker, the parts of the meat that touch agains each other cook to a state that is sort of a mix of the internal meat vs. external meat on a perfectly cooked piece. It neither creates bark really but it also isn't raw like internal uncooked meat.

I've found since then it's best to leave space so that air/smoke/heat can pass between the two pieces.
