I haven't posted in awhile, but thought I would share some beef ribs.

Kept it simple.  Rubbed with EVOO, salt, and pepper.

I generally smoke these the same length of time as pork ribs and they come out great.  Used 3-2-1 @ 230.

All Finished.  I like beef ribs.  A little greasy, but they taste great.

 
Get the temp up to around 275˚ or so and you'll find it not only shortens the cook time (more like 2:00-0:45-0:30) but it also renders much more fat, resulting in a far less greasy end product.
