Greetings all! If you have seen my post lately you know I have been using my Weber kettle a lot. Decided Sunday to go back to the stick burner and smoke some beef ribs. I had 2 vac packed in the freezer. I seasoned with Killer Hogs AP then added some Montreal Steak seasoning. Threw it on with some spare rib tips I had saved. Used a small amount of charcoal to get the hickory going. Smoked @ 250 until internal of 212 degrees. Most people take it to 200-205. I like it @ 210-212. I am new to beef ribs and I must say this was my best one yet. The bark was just what I was looking for. Good smoke ring and super juicy and tender. Take care and keep on smokin!!

That looks great! I agree with your higher temps. ....also this reminds me I have like 4 rip tips in the freezer I need to do something with. Nice cook!
 
Those look so good. I have to get some Beef Ribs smoked before it gets too chilli in PA...JJ
 
Looks great!! I sure love beef ribs. Just got 6 bottles of a local dirt rub. I’ll be doing more soon.
 
Beautiful piece of work there Hawg, nice job, Like! I've been using my Weber more to the point my stick burner sat for a couple of months all covered up and alone. For something like beef ribs or a butt the offset seems to just get that bark just right with the necessary smoke flavor. RAY
