Beef rib smorgasbord

Last week a friend gave me a local Q joints “Dirt” rub. It’s a very nice rub that appears to have activated charcoal, SPOG and savory herbs. Seemed perfect for some rich beef ribs. I got out a couple racks of short ribs and two racks of extra meaty Certified Piedmontese Beef back ribs. I hit them with olive oil and a heavy coating of the rub. Didn’t get started until late so rolled the dice and did them hot and fast @ 300F using B&B Hickory lump and seasoned hickory chunks. Took just over 5 hours. They were like butter at 205F. Very juicy and the rub was very good I’ll be buying more and I’ll also go hot and fast again
