These look great, any pointer on using venison and ground pork?  We are headed to the river next weekend and I was planning on making some sticks with some left over ground venison I have in the freezer.  I am going to use some uncle abes seasoning mix.  Do these need to rest in the fridge overnight before smoking, and how long and what temp to smoke theese at?  Thanks for any input.
